Description

This half day of wild food foraging is for folks curious about Britain's wild foods, but who have little or no experience and wish to know more. This is experience is very much the first foot on the ladder in exploring the edible wild.

Marcus Harrison, who runs the foraging courses, is a UK authority and specialist on wild foods, and from time to time gives talks on the subject at the Natural History Museum. He has given regular wild food walks and talks at the Eden Project, and is involved with teaching survival professionals life-saving foraging skills.

And long before wild food and foraging became fashionable, Wild Food School featured on BBC Countryfile, Westcountry TV and the Good Food Channel ('Simon Rimmer's Dinners'), has appeared in The Times, Sunday Express, and other publications like Countryfile Magazine, been involved in numerous BBC Radio broadcasts, and frequently advises TV production companies.

On your foraging walk you will be shown how to identify wild edible plants, such as wild garlic, nettles and even daisies as well as learning the different plant facts and recipes that can be made using your findings. Foraging is a great way of understanding the natural world around you, not only will you find food but you may catch a glimpse of deer and other wild animals as well as discovering some new surroundings.

You will spend three and a half hours walking around the picturesque countryside with Marcus. He will advise you on edible plants as well as teaching you different plant facts.

We recommend that you bring a notepad and a camera as well as being dressed appropriately for the weather on the day.

Chocolate Treasure Hunt for Two

Description

It’s fast, it’s furious, it’s creative, it’s witty and it’s a highly entertaining activity for all ages. In this race against the clock, you will need to use your thinking skills to solve a series of clues, scavenge a number of items, take some brilliantly creative snaps and win some great prizes! You can work in pairs or in a team of up to ten people.

Strategy and Clue Solving - After you have been briefed, you and your companions will head off with a treasure hunt pack filled with clues, riddles, maps and - of course - essential chocolate supplies. You will have to work together to set the strategy, solve the clues, plan the route and get the questions answered.

Scavenger Points and Photo Challenges - You will be given bags of chocolate coins, to ‘bribe’ your way to gathering the scavenger items. During the race, you will also need to keep your eyes peeled and wits about you to collect the photo bonus points. There will be lots of chances to get some great snaps, so everyone can get their pose on!

Master the delicate art of Dim Sum at the London Cookery School. With over 100 different types of Dim Sum there is quite literally something to suit everyone’s taste.

This class will cover all the basics such as learning about the different ingredients and fillings of Dim Sum to even pronouncing them correctly.
Under the helpful guidance of an experienced Chinese chef, you will follow step by step instruction from making and rolling the dough, preparing and mixing the fillings, forming the dumplings and cooking them.

You will learn how to make Har Gow, (Prawn Dumplings), Chiu Chow Fun Gwor (Chiu Chow steamed dumplings) and Sui Mai (Open top Steamed Pork Dumplings). Finally you will be able to sit down to eat your own creations complemented by Chinese tea.

After your class, you will be provided with a list of recommended products that have been used and a recipe booklet will be sent to you afterwards showing you all the recipes covered in the class.

Hands-on Cookery Class

Description

Whilst some people find cooking enjoyable and therapeutic, there are also those who lack the confidence to throw themselves into preparing a meal without plenty of preparation. This half day cookery lesson is a great chance to learn everything about the essential skills needed to prepare great food, but also to learn everything you could hope to know so that you feel at ease when it comes to tackling a new recipe. A lesson with a professional chef is the perfect opportunity to ask any questions that you might have about the secrets of preparing fool-proof dishes, how to ensure that you aren’t too heavy handed with your seasoning and hints and tips on making fantastic food to impress your family and friends.

After a warm welcome on arrival you will meet your expert cookery teacher who will talk you through the day's programme and what you will be cooking during your lesson. Then it will be your turn to get your apron on and get cooking. At the end you will either be able to sit down and sample what you have made over a relaxed meal with the other attendees or take it away to enjoy later. Depending on the location, your class will take place in a purpose built cookery school, a professional’s home or even the more intimate surroundings of your own home. The exact format varies depending on the cookery school and class chosen.

This experience is a chance to learn how to decode the descriptions that can sometimes seem designed to confuse and understand which flavours they prefer and what to look for when choosing a bottle. Guests are encouraged to sample a range of wines alongside a selection of cheese, chocolate and fruit to understand how the flavours interact to enhance both.
 
This experience is ideal for anyone who wants to know more about wine and the best way to make the most of it. With a wine instructor on hand to explain the entire process from grape to glass, this is a chance to learn everything from choosing the perfect bottle to serving it in a way that will make the most of its unique flavours.

This event starts with a warm welcome from the resident wine expert and a glass of French sparkling wine to set the tone for the whole experience. Guests will be seated at tables where they will be served a platter of cheese, chocolate and fruit to combine with the various wines that will accompany them.
 
The wines served will include two organic white wines which have made names for themselves amongst experts; two red wines which have been recognised for their appeal to wine connoisseurs the world over and a sweet white wine which will win over even the most sceptical fan of drier blends.

Budding bakers can put their culinary hats on for a two hour macaroon making class. Throughout your experience, you will create a selection of macaroons in a variety of flavours. The fully qualified chefs at the Smart School of Cookery have designed the perfect class that will teach you how to make these delicate confections, achieving perfect results every time. Their pretty colours and endless selection of fillings mean they not only look great, but will taste delicious too.

Upon arrival you will be greeted by one of the chefs at the Smart School of Cookery. They will give you a brief overview of what to expect from the class then you will get changed in to your aprons, ready to get your cook on!

You will learn the skill of making an array of classic French macaroons with a selection of delicious fillings with the experts.

The chef will ask a small group at a time to join him/her to prepare and cook during the session. Their extensive experience and success is based on this method to ensure maximum education and knowledge is passed onto our guests because of course it is a cookery class after all. Sit back and enjoy some contemporary British cooking, delivering delicious food. Head chef Dan Graham champions the use of fresh seasonal produce from local suppliers and their own garden so you can expect exciting flavours showcasing the best of Yorkshire. The restaurant is nestled within The Talbot Hotel, an historic Grade II listed building in the heart of Malton, a charming market town.

Many people don't realise that England produces its very own wine! Well, this is an ideal opportunity to find out about the English wine industry by enjoying a tour of one of England's finest vineyards, followed by a tasting session.

During the tour, your experienced guide will explain the history of English wine, how grapes are grown on a commercial scale, the methods used at the vineyard, and the reasons for the choice of grapes grown. You will also learn about the wine production processes for different types of wine. To complete the experience, you will sample a selection of the wines made at the vineyard.
